Drawing inspiration from modern Australian café fare and Italian influences, we asked Stellarossa Australia Brand Development Manager Erin Warner what diners can expect from the café staple.

Definitely for our coffee!
What’s the secret to a great cup of coffee?
If I told you, I’d have to kill you. I will tell you one thing, though – if there’s no love in the coffee, then it’s not worth drinking.
Cam, our resident ‘Coffee Professor’, would tell you that coffee is a story. From the journey the bean takes from the farm to the cup, to the skills and passion of the baristas preparing the end product – the secret is in the care that’s been taken by every person involved in that process along the way.
Where are the coffee beans sourced?
Our green bean partner ethically sources beans directly from co-op farms in Brazil, Papua New Guinea and El Salvador. We’re proud to have complete traceability of our coffee from when it’s picked on the farms to when it extracts into the cup.
Does Stellarossa have any signature drinks?
By far our most notable signature drink is our coffee – our exclusive 5 Star blend is full-bodied with spicy chocolate characteristics and a rich, lingering berry-like velvet finish.
In summer of 2018/19 we also launched our house-made Soda Punch and Real Fruit Smoothie ranges.
What inspired Stellarossa?
Coffee was the initial inspiration for our co-founders, Darren Schultz and Phil Cronin. Stellarossa began as an ‘Espresso Bar’ concept in Brisbane’s CBD. The brand has evolved and grown over the years to meet the market and to ensure we have a sustainable business model for our Franchise Partners.
What type of cuisine do you serve?
We make hand-stretched pizzas with traditional flavours, delicious burgers to suit all tastes, pastas, salads, soups, sandwiches, chips and other café favourites. Our all-day breakfast range is vast and includes everything from milk bun french toast or smashed avo to the classic bacon and eggs or eggs bene.
What’s your favourite item on the menu?
There is no short or easy answer to this question. I’d have to say the perfect Stella breakfast for me would be an eggs bene with grilled haloumi and a piccolo. For lunch I’d splurge on a balsamic and rosemary beef burger and a blueberry lavender soda punch. For dinner it’s a toss-up between a chicken saltimbocca or a gamberi fettuccine, a house-made garlic bread and a glass of crisp white wine (or two).
What food and drink trends have you noticed in 2019?
We’ve noticed a continuation of the trend towards sustainable and ethical sourcing of ingredients and fresh, wholesome food options. We keep it simple.
Where are your restaurants located?
We have 22 cafes located throughout south-east Queensland, from the Gold Coast up to Mackay and out west to Dalby. Our new Sippy Downs site is the pioneer of our drive through concept, with more of these projected to open in 2019.
