The Sunshine Brewery is the baby of a surfer passionate about beer and an adrenaline junkie passionate about business, good food and adventurous living.
Since opening in 2017, the Sunshine Brewery has become a local favourite, winning a silver medal for their Spartacus Belgian Tripel, a bronze medal for their Pale India Ale Hop Therapy Series at the 2019 Royal Queensland Food & Wine Show Beer Awards and a silver medal at the 2018 Independent Beer Awards for their Blue Sky IPA.
We asked ‘Brewministrator’ Daryle Cook about the secret to a great beer and what beer enthusiasts can expect from Sunshine Brewery.
What inspired Sunshine Brewery?
We were grain brewing in my garage at home and, following the sale of my business, I was looking for something else to get into. Sunshine Brewery was one of the ideas.
What’s the secret to a great beer?
Balance - balancing hop bitterness and aromas, with the right malts and other flavours.
What type of beers do you serve?
Predominantly Ales, occasionally a Pilsner and a Lager.
Does Sunshine Brewery serve food?
We serve bar snacks and cheese platters with local cheeses. Otherwise, we have a food van in every Friday and periodically on the weekends - check the events page on the website for dates.
What is the brewery’s signature beer?
I think that would have to be our Double Sunshine IPA, which we serve in a large goblet to enhance all the hop aromas and the creamy red malt flavours.
What beer trends have you noticed in 2019?
People are looking to try sour beers more than ever before. Our Kettle-soured Kaffir Lime Gose is getting a great response. Also, it was quite noticeable the change in tastes as the temperature dropped this year, with people looking for beers with more flavour rather than the lighter ales.
Are there any new items on menu in 2019?
There are always new beers on offer. In our first two years we had 38 different beers and we will be continuing that trend, so there will always be something new to try.
What’s your favourite item on the menu?
The Hop Therapy Series Pale India Ale. It’s a little sweeter and full of hop flavour. Also, when I am not driving, the Mango IPA.
