A healthier burrito recipe

They’re a Mexican classic, but sometimes not the healthiest choice for your dinner.

Here is a recipe that will allow you to enjoy your burrito in a bowl, minus the added guilt.


  • 2 deboned chicken thighs
  • 2 tbsp olive oil
  • 1 cup cooked rice divided into two bowls
  • Your favourite stir-fry veggies: red and green peppers, onion, or anything else you have on hand for your burrito bowl

Corn Salsa

  • 1/2 cup corn
  • 1/2 cup black beans
  • 2 tsp lime juice
  • 1/4 cup coriander
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Dash of chilli powder

Pico de Gallo

  • 2 tomatoes finely chopped
  • 1/3 cup red onion finely diced
  • 2 tsp lime juice
  • 1/4 cup coriander finely chopped
  • 1/2 tsp salt


  1. Divide the rice evenly into two bowls.
  2. Mix together salsas and let sit to help enhance their flavours.
  3. On high heat, add olive oil to a large frying pan. Add the chicken and cook on high until cooked through
  4. When the chicken is cooked, remove from the heat. Be sure to let it rest for about five minutes before cubing.
  5. After the chicken is finished, keep the frying pan on the heat and add veggies, sautéing for about five minutes and stirring every once in a while.
  6. Now put your bowl together. On top of the rice, add cubed chicken, stir-fried veggies, salsas and sliced avocado in a circle around it.
  7. Add your favourite hot sauce, sour cream, coriander and salsa as garnishes and enjoy.
